The Union Bowl was created with longtime collaborator chef Missy Robbins. You could say it's our coziest shape ever—it's slightly deeper and more narrow than our best-selling Pasta Bowl, which helps it retain more heat (and, yes, more pasta).

Think of it as the bowl you’ll reach for when you’re in the mood to eat dinner while sitting cross-legged on the sofa.

For our June 2023 Special Edition, we’re serving up a new clay and glaze offering: Toasted clay with Sapphire glaze. This rich shade of blue glaze, which is typically only available to our hospitality clients, will make everything you put in it pop — from citrus-dotted salads to herby pastas.

This Turquoise glaze option was released as a part of the 2023 Holiday Gift Guide and may only be available for a limited time.

This item was a limited run and now apart of our Special Edition Archive.

What’s reduction firing? Here’s how Jono explains it:

“We wait until a particular point in the firing, around 2000°, and at that point, we increase the gas which creates an oxygen-hungry environment inside the kiln. That oxygen-hungry atmosphere takes oxygen from the metallic oxides in our clay, which makes them look really shiny and metallic and interesting.”

Use your shimmery Union Bowl to serve foil-wrapped sweets this month or consider it a shining example of a perfectly good excuse to make a warm bowl of pasta.

Our August 2024 Special Edition "Swirlware" Union Bowl is created using a meticulous, time-intensive process. To create the bowl, an artisan layers our Dark Brown clay with a Porcelain, creating a wedge, which is then cut into slabs and jiggered using our roller machine. We make a handful of other adjustments to maintain the integrity of the swirled clays: There's no water used in this process, for example, and there is an extra trimming step to ensure the swirl pattern is uniformly defined.

The result is a one-of-a-kind bowl in a bestselling shape that can artfully showcase produce on the counter or serve up a bowl of fresh pasta.

6.75" W x 3" H and weighs about 1.5 lbs.
Holds up to 32 fl oz.

Our products are made of ceramic stoneware, using clays sourced in the northeastern United States. Each piece is designed with a thick build, constructed by hand, and kiln-fired to temperatures over 2,000 degrees Fahrenheit to ensure maximum strength and durability.

Dark Brown / White is our foundational clay and glaze combination, available in the largest assortment of shapes. With this pairing, we apply a slightly thinner coat of glaze than on our Toasted clay—enabling some of the darker clay beneath to be seen and giving the glaze an off-white tone.

Our Toasted / White combination has a brighter finish than our Dark Brown / White colorway. The clay also has grog—pre-fired, ground pottery that’s mixed into clay—which is a bit rougher in our Toasted clay than in our Dark Brown clay, but it smoothes out over time. (Think of it like breaking in a pair of raw denim, except you do none of the work.)

Something to be aware of: Little dark brown or black speckles may appear on the surface of the glaze where bits of iron come through.

Similar to our Moss glaze, Turquoise comes in a range of hues — some pieces are a matte, robin's egg shade and sometimes you’ll even see swirls of a darker, shiny blue. This glaze is especially photogenic, framing food colorfully on the plate. (That said, it still has a neutral quality that allows it to pair nicely with any other glaze in our collection.)

The Union Bowl will ship within 5 - 10 business days.

At present, we are able to ship retail orders to the United States. We also ship internationally to restaurants and hospitality businesses that meet our order minimums. Please contact us at hospitality@jonopandolfi.com if you're interested in learning more about placing a hospitality order for delivery overseas.

When trying to decide if a glaze color or clay body is right for you, we recommend purchasing a smaller item like a Cereal Bowl in the color of choice to see it in person first. Our pottery is often made or glazed to order and very tricky to ship, so we try to provide our customers with as much guidance as we can in advance of ordering to minimize returns. That said, if you're not satisfied with what you receive, we'll issue a refund less a 15% restocking fee. (Restocking fees will be waived for orders under $50.)

Inside the Studio

Our dinnerware is hand-made at a light-filled studio in Union City, New Jersey, by a team of artisans. The studio is also where we quality check and pack up dozens of orders per day, which are then sent out to restaurants like Lilia, Jean-Georges, and Felix Trattoria and to serious home cooks all over the country.

Our Story

When Jono started the company in 2004, he had a simple mission: to design unique dinnerware options for the hospitality industry. He started small, with one wheel and one kiln, and collaborated with chefs, taking risks and learning from his mistakes. Then and now, his priority is to work directly with our clients, responding quickly and thoughtfully to their needs in ways that larger manufacturers can’t, resulting in dinnerware with a personal feel that sets our clients’ restaurants and dining rooms apart.

Our Process

Each piece that Jono has designed has its own unique production process, which can entail as many as 15 individual steps, and use methods such as slip casting, jiggering, and good old-fashioned wheel throwing. Our studio is equipped with 10 kilns and 6 wheels and we begin each day with the thrill of opening our Blaauw kiln to discover the finished pieces we loaded in the night before.
